★ Exploring Mikuni’s Gourmet Highlights ★ Sushi Mikuni’s sushi represents a unique food culture shaped by the Kitamae-bune maritime trade, which brought seasonings such as vinegar and kombu, combined with the rich variety of local fish landed at Mikuni Port. Careful techniques—such as kombu-curing white fish, lightly vinegared preparations, and aging sweet shrimp—are used according to the condition of each fish. Enjoy small portions of the day’s seasonal catch, including flounder, horse mackerel, and nodoguro, each reflecting the history and culture of this harbor town. This is sushi that can only be experienced in Mikuni. Café & Bar In the relaxed atmosphere unique to a port town, enjoy seasonal cocktails, local Fukui sake, craft beer, or coffee at your leisure. From the moment you walk through the gently sea-scented night air toward the venue, the sense of travel deepens.
